Wok-fried Prawns with Mangoes


8 pieces jumbo prawns, clean
2 pieces sweet ripe mango, peeled and sliced
1/3 cup capsicums, jardinière
½ piece medium onion, cut triangle
1 teaspoon chopped garlic
½ teaspoon chopped ginger
3 pieces spring onions cut lengthways
1 tablespoon sake
1 teaspoon soya
salt to taste
 crushed black pepper to taste

For the prawns: marinate the prawns with sake and soya sauce and leave for 5-8 minutes.

To cook the prawns: using a wok, sauté the garlic and the ginger until translucent and add the prawns. Stir-fry and add the vegetables. Deglaze with sake and season with soya sauce, salt pepper and sugar. Add the remaining ingredients and stir-fry until the prawns are cooked.

To assemble: arrange the prawns and the vegetable on oval plate and serve with some fresh herb and chives. Makes 2 servings.

Helpful hints: combination of prawns and mangoes will give you a translucent taste. The mango should be ripe, sweet but firm. The Alfonzo mango (Indian mango) is the best because is sweetness and yet is not messy while cooking.
