Seafood Fried rice

Asian peoples like to have fried rice, especially seafood fried rice. Many styles and technique of cooking for this dish, but better do it in a wok..! More tasty, believe me!


2 cups of cooked rice
2 pieces chopped shallots
4 pieces fresh red chilies, brunoise
¼ cup carrot, brunoise
¼ cup green capsicum, brunoise
2 tablespoons spring onions
1 teaspoon chopped garlic
3 tablespoons vegetable oil
1 tablespoon light soya
1 tablespoons chili paste for fried rice (30% red chilies, 25% garlic, 35% shallots, 10% tomatoes)
½ tablespoon sweet soya
drop of sesame oil
salt, pepper to taste
80 grams of peeled prawn, cubed
80 grams of squid cleaned and cubed
80 grams of scallops cleaned and cubed

To prepare the fried rice: in hot wok with oil, fried the seafood first and keep aside. Clean the wok and reheat it. Add a little oil and sauté the shallot and garlic, add the vegetables and chili paste and add the rice to the wok. Stir-fry them and add the fried seafood while sautéing.


Taste the fried rice before serving! Makes 2 servings
