Prawn Fried Rice with Eggs, Spring Onions and Garlic

Simple recipe and very tasty. Love this fried rice…!

2½ cups cooked rice
200 grams of prawn, peeled, clean and cut into cubed
3 pieces eggs, scrambled
1 teaspoon chopped garlic
2 tablespoons fried garlic
3 tablespoons sliced spring onions
1 teaspoon of light soya
2 teaspoon garlic oil
1 teaspoon unsalted butter
salt to taste
dash of sesame oil
some oil to fry the prawns

To prepare the fried rice: in hot wok with oil, fry the prawn to cook. Clean the wok and put on medium high heat and sauté chopped garlic, add fried prawn, rice and scrambled eggs. Stir-fry with the seasoning and butter.  Add the spring onions, fried garlic, sesame oil, garlic oil and butter to finish. Check the seasoning before serving. Makes 2 servings.
